Brown rice in lotus-wrapped savory rice packages

Have you ever tried using brown rice in lotus-wrapped savory rice packages? My boyfriend is diabetic so I'm trying to use only whole grains. Any tips about what kind of brown rice to use or any other modifications to make to the recipe in Authentic Chinese Cuisine?

Also, I bought something similar frozen in my local Chinese market (but with white rice) - have you ever tried freezing your recipe and, if so, should I do anything different beforehand?

Kourtney, cooked rice freezes and reheats well. There are directions for cooking Brown Glutinous ("Sticky") rice on p. 94 of the book, so you could substitute that. But you have to use sticky brown rice (also called "sweet brown rice"), not regular brown rice. I found it here on amazon:
