Hi Bryanna,

Canada day is also my daughter's birthday. We lived in Edmonton for two years when she was 12-14 years old. She enjoyed the fact that the whole nation celebrated her birthday!

I'd like to try the Italian sausage burgers soon - I read the recipe in 'Nonna's...' and again on your blog. Problem: I cannot have gluten.

I have various non-gluten flours, and a mixture of flours which I generally use for baking. I think this flour mix would work instead of the gluten in the recipe - probably they'd be more crumbly, but I don't mind that.

What do you think?

Hi, Pat! If you have a flour mix with some xanthan or guar gum in it, that might work! Let us know!

Hi,

Thanks, I have xanthan gum and can add it to my flour mix (which is 1/3 brown rice flour, 1/3 millet flour, and 1/3 sorghum flour). I add the xanthan gum when appropriate (pancakes don't need it), and add tapioca starch or cornstarch when appropriate.

I use this mix for pancakes and muffins, and assorted baking. I'm quite proud of the pancake and muffin recipes, which I developed myself (I'm not a recipe developer) because they have the 'whole grain texture and flavor' that I was seeking.

I've only been obliged to be Gluten Free for about 3 years, and had been grinding wheat and making whole grain bread for about 30 years. So it was a shock to need to be Gluten Free.

I still cannot say I exactly like being gluten free, but I've learned to cope. I've never been especially interested in baking (except bread!), I'm much more of a cook than a baker. But I have to do it now, so I do.

I'll send you the pancake and muffin recipes if you are interested, and you could publish them on your blog, or in a book or wherever, if you wish. Let me know if you'd like them, please.

And I'll let you know about the sausage.
