Vegan Spanish Menu

Hello! We have a client visiting from Spain.We are hosting a dinner for them next weekend. I would like to prepare an "over the top" Spanish themed vegan menu. So far I have gazpacho, paella, and sangria on the menu. If you have any ideas of what could be added to the main course and the dessert that would have the Spanish theme I would be REALLY appreciative of your feedback. Thanks!

Hi Jessie, your menu sounds wonderful so far. How about adding some vegan empanadas to the main course. This one: http://tomorrowaustin.wordpress.com/2007/06/25/third-catering-gig-vegan-empanadas-with-coleslaw/

...sounds good. But there are lots of other possible variations. As for dessert, some figs macerated in Spanish sherry and a dollop of soy ice-cream might be a nice finishing touch. The possibilities are endless!!

I just looked at the link for the vegan empanadas ... this will be a perfect addition. Thanks also for the dessert recommendation. This is going to be a FUN evening!

Jessie, how was your dinner party and how did the food turn out...I would love to hear all about it!!
