Hey Gang,
I am looking for some Panini Recipes which are not boring. Seeing that I am testing the vegan waters (again), I could use some assistance.

Hi, Chris! You don't really need a recipe, but you can check out some (non-veg) panini recipe books from your library for ideas that you can then veganize (we can help you with that!).
You can use a piece of a crusty loaf or ciabatta, sliced horizontally, or, if toasted, use sandwich bread.
You can, of course, use any number of vegan meat subs and "deli slices", including thinly-sliced marinated or baked or smoked tofu; vegan cheeses like Sheese, Daiya or Earthkind;
Vegan mayo, which I like to spice up with pesto, ajvar (Balkan red pepper and eggplant spread, recipe here: http://docs.google.com/View?id=dqhrgm2_294cjb5gbdv); pureed roasted red pepper, garlic, etc;
grilled vegetables like eggplant, zucchini, peppers, etc (I like to brush them with a mixture of equal parts soy sauce, maple syrup and Chinese sesame oil);
freshly-cooked and squeezed greens; grilled portobello mushrooms;
artichoke hearts;
tomato slices;
fresh herbs like basil
You can use other spreads besides mayo-- like Ajvar (mentioned above, recipe here http://docs.google.com/View?id=dqhrgm2_294cjb5gbdv), veggie antipasto (if not too chunky), Mediterranean bean spreads, vegan cream cheesey spreads, etc.
I love using pears and Sheese "blue cheese" or "smoked cheddar". Caramelized onions go well with this, too.

Thanks so much for your post. It was way more than I expected!
I have my Sourdough which works well. Now to roll up the sleeves, go shopping and start cooking.
My dancer daughter begged me to get some of the sheese (blue that is) for the pear/blue/and caramelized onion recipes. And the s'more panini sounds so tasty!
