I have created a recipe for vegan meringues using soy protein isolate. I have posted in on my new blog (vegyatra.blogspot.com). Please have a look. I know you can make meringue with Versawhip but I hope it might be useful for those who cannot obtain this ingredient.

Wishing everyone a happy new year for Friday.

Looks great! I actually haven't used Versawhip for meringues. Julie Hasson has a soft meringue topping made with Versawhip, but not the crispy version, so this is great! I''ll give it a try-- my DH loves meringues!

Congatulations orangold. I'm glad someone has taken my (and Daves) recipe and created meringues. I had a feeling they would be possible but had put the idea aside for a while.
Egg made meringues crack, too, so don't apologise for that.
A lower oven temperature may get around the problem. Even using a dehydrater comes to mind. Where a daughter-in-law worked they produced cookies that were air dried (with fan heaters in winter) and that may be another possibility.

Fantastic blog, Jenny! I love your take on "kitchen alchemy"! I'm sure there are many who would be interested in your gluten-free "seitan"!

Hi Kiki, soy protein isolate is just a protein powder that you add to cereals, drinks, etc to get a concentrated source of protein. It is often sold in tins but it might not always be labelled 'soy protein isolate'. Sometimes it's called 'soy protein powder' or something similar. You can usually get it in health food stores or large supermarkets, or online. I have seen (or something like it) in a number of countries. Hope this helps. (I'm going to clarify the blog entry soon - I'm just waiting till I finish a few meringue experiments I have been trying, so that I combine all my results into a improved recipe.)
