Bryanna has developed some WONDERFUL recipes for okara ... from brownies to pate to parmesan "cheese"!! I use the parmesan cheese one a lot! It has such great flavor.

Another great couple recipes where I use it up is to combine it with chickpeas to make a chickpea salad/dip. Pictures and recipes posted here and here.

And if you have a dog, chances are s/he will love it. When I don't use it in recipes, I just give the latest batch of okara to my dog.

As to the whey, the only suggestion I've seen is to use it in bread as the liquid. See this post.

Bryanna ... have you run across any good uses for the whey?? I must admit, I just always pour mine down the drain.

The whey is nutritious for plants, evidently.

I dilute the whey (about 1 part whey to 6 parts water) and use it as a garden fertiliser. Herbs love it, also pot plants.

I use fresh okara in bean or lentil patties - I find between 1/4 - 1/2 cup is about right to 1 1/2 cups bean or lentils.

You can pop it into almost anything but be aware that it is high in fibre which can "get" to some people.

i use okara in a "meatloaf" recipe (in place of the box of aseptic tofu) and an apple quick-bread recipe:

have to say, though, neither are nearly as good as bryanna's brownies but i can't eat brownies all the time. oh wait, i could but i probably shouldn't. :)
