Wow, Bryanna, thanks for the new newsletter. I CANNOT wait to make those sausage burgers. I will do it for the 4th of July!!!
My boyfriend lives in a housing co-op that has veggie meals each Sunday for everyone. I am cooking this week! I am going to make a spinach salad, calzones with your tofu ricotta recipe, and chocolate cake.
I was wondering if your ricotta and dough recipes hold up for multiple recipes. There will be able 20 people there, so I will be cooking all day!! Do you think I should plan on 1/2 calazone per person. With one recipe of your dough, I make 2 calazones, so they are HUGE! So I think I'm making 10 of them soon! :)

I've read that you're supposed to cut back on yeast for larger bread recipes, although I'm not sure by how much. Also, you may need to knead the dough for longer to get the desired consistency if you multiply the recipe.

Yes those recipes can be multiplied, but, like Kourtney said, , when you double the dough, DON'T double the yeast. ---------- "To look like a goddess, eat like a peasant." Karen Andres

Thanks for the yeast tip.. I never would have figured that out myself. :)
I made 10 calzones tonight, along with your orange fennel salad and the marinara sauce recipe. Everything was a hit!!!
