Hi there!
I was wondering if someone had the recipe for Bamiya. I am a fan of okra and would love to make this dish.
Thanks,
Rochelle

Hi Bryanna,
I could not find the recipe in the new newsletter. I did a search for Bamiya in the PDF file. Did I miss it somewhere?
Thanks,
Rochelle

OMG!! I left it out by accident! It's in the menu but the recipe isn't there1 I'm so sorry! Here it is!
BRYANNA'S BAMIYA (EGYPTIAN OKRA AND TOMATO STEW WITH GREEN BEANS) There are many versions of this delicious vegetable dish. I wanted ton use okra, but my husband claims not to like it, so I mixed in green beans, and he liked it! Okra is a great source of soluble fiber. 2 Tbs extra-virgin olive oil 1 large onion, chopped 1/2 lb young okra (I used frozen) 1/2 lb young green beans (trimmed), or small whole frozen (OR use more okra) 1 tsp crumbled dried sage (NOT ground) 2 tsp dried dillweed 1 tsp sugar 1 tsp salt 1 28 oz. can diced tomatoes, drained a bit freshly-ground black pepper to taste Heat the olive oil in a skillet. Add the okra and stir-fry until they have browned a bit. Add the onions and saute until they have softened. Add the remaining ingredients, bring to a boil, then cover and lower the heat. Simmer for about 15 minutes, or until the beans are tender. Serve hot or at room temperature. Servings: 6 Nutrition Facts Serving size: 1 serving Percent daily values based on a 2000 calorie diet.
