A couple questions

I've been looking for low fat tofu and just haven't been able to find it where I usually buy my regular tofu. Is low fat tofu only sold at HFS ?

I also have no idea what pastry flour is. I've seen it in a couple of recipes ...... How is it different from regular whole wheat flour ? Are there various types of pastry flours (like white, whole wheat, etc)?

Low-fat tofu is available in some areas, but not all. if you can't find it, just use regular. It's not that highin fat, anyway. (See the article on it in that low-fat info i posted.) As for pastry flour, it is made from soft wheat, that has less gluten in itthan all-purpose or bread flour. It does come in white and whole wheat.

This is why I use it in low-fat recipes (this is all in that low-fat baking document i sent you); fat coats the gluten and makes it tender. If you use little or no fat, the less gluten the better (up to a point-- you needsome for structure!), so pastry flour will make a tender low-fat product.
