I was given two mangoes and need to make some kind of fruit dessert/salad for a group. What can I easily add to it to extend them? Pineapple? Strawberries? Sprinkle coconut or cinnamon or some kind of crumbly oat topping for a cobbler? I don't know what flavors work with this fruit...THANKS!

Bryanna has a Gold Tropical Ambrosia in Thanksgiving last year's newsletter. I haven't tried it yet.
Also, I thought I saw a Mango Tart recipe in her newsletters in the past. But I don't know where it is now. I thought I saw the picture of it. :-)

Do you have an ice cream maker? Two mangoes + juice of a few grapefruits + sugar to taste + silken tofu (optional) = awesome sorbet.
I've never tried cooked mango, so I don't know how well the cobbler would work. I love mango cheesecake, so perhaps you could use one of bryanna's tofu cheesecake recipes, add pureed mango for some of the liquid, and then arrange slices of mango on top and coat them with melted jelly (apricot comes to mind, but whatever flavour you like/have on hand).

I love Thai Mango and Sweet Sticky Rice dessert. It is easy to make but maybe unusual to a lot of people. :-)

I'm always partial to fruit salads. Just cut up whatever seasonal fruit is available, then add juice (pineapple, citrus, whatever you have) and sweeten as much as you like. If fresh fruit is limited to just bananas, apples, and oranges, adding a small amount of unsweetened frozen or canned fruit will also work. A sprinkle of grated coconut or pomegranate seeds on top is a nice touch.
