I JUST got back from a trip to South Korea and oh my goodness the food is good. I absolutely love the porridge! I had a black sesame porridge that was amazing, as well as pumpkin. And the spices.. mmm. I also had some of the best tofu I've ever tasted!
It was hard to eat vegan, since many didn't understand the concept of being veggie. But I was staying with residents, so they helped me ask questions about ingredients.
I'm going to get a couple cookbooks so I can start veganizing and recreating the foods I had!

Sounds like you had a good trip, Steph! My mom teaches English to South Korean students in Malaysia and she told me that their food is really good, and seems to be a lot less salty than "regular" food yet is flavored really well. They also seem to like really spicy food. My Mom used to give me some of the best seaweed I had ever tasted - from Korea. It had grapeseed oil and was just yummy. ---------- Val

Hi Steph!
Yes, I agree. Their food is good, healthy, and balanced. I like the Dolsot Bibimbap (the vegan version). It is a dish that is cooked in a fire heated stone bowl. The bowl is heated very hot on top of a stove first. Then take if off from heat while serving, cooked rice is inserted into the bowl, topped with veggies, tofu, sauce, and gochujang (red pepper paste). Stir and eat. The rice becomes crispy. Yum! I don't have the bowl otherwise I probably already try it. :-)
Let us know if you come up with a vegan Korean dish. I will try it. I live near a Korean market. :-)

ooh... i didn't realize that that books was from your publisher, it was one of the ones I was looking at. I'll have to try that one!
Debbie the gochujang you mentioned sounds like a sauce I had on some amazing tofu. Thanks!! (one of the problems is that I have no idea what the food i ate was... it was all listed in korean!)
i'll let you know how it goes!
