Bryanna and Dori,
I tried Dori's corn flour/spelt flour version of Bryanna's low fat pastry crust and it was terrific! I used it with Bryanna's pumpkin pie recipe--in which I substituted 1/2 tsp KAL stevia for the sugar and that was wonderful, too.
Bryanna and Dori, this is very exciting. Now I can make a lot of other Bryanna specialties that use that pie crust recipe. The tofu pot pie is on the top of my list!
Also, Bryanna, your gluten-free mix is REALLY good. It made an incredibly moist and tasty corn bread that was absolutely scrumptious in your corn bread stuffing. Thank you both so much! Catherine
P.S. Debbie--I finally got a hold of some millet flour and hope to make the millet/corn bread recipe you gave me soon!

Sure, Bryanna. I worked from Dori's message about the french strawberry pie. Here are the ingredients I used:
1/2 cup whole spelt flour 1/2 cup MINUS 1 T corn flour 3 T pure olive oil 3 T soymilk with 1/2 tsp lemon juice added 3/8 tsp salt 3/8 tsp baking powder pinch of KAL stevia powder
I have to admit I did have trouble rolling it out and kind of gave up and patted it into the pan by hand, but then again it's probably been at least a million years since I attempted to make a real pie crust. At any rate, it tasted divine--and I wasn't the only one who thought so! Catherine

I'm glad you tried it! I had troubles with the rolling also, I used two oil sprayed peices of parchement paper to roll it between and then when I placed it in the pie dish I had a little mending to do. My family loved it also. Tofu pot pie, it's been so long since I made that one, sounds good! I can't wait for my spinach and kale to come up so I can do the kale and butternut squash dish from the newsletter. ---------- "To cook is to create.
