using light buckwheat flour. I could find only one kind of buckwheat flour in bulk at my hfs. I didn't know if it was considered light or dark since the color itself didn't really strike me as either. Having tried it, however, and seen the color of the finished product, I'd definitely say it was supposed to be dark.
Since I haven't used this type of flour in a while, am I correct that the dark flour is a roasted version of the light? And after using raw buckwheat groats in your snack bars and seeing how soft they were, I was wondering if it would work to grind a small amount of them in a coffee grinder since I don't have a grain mill (yet!) . . . Thanks! Catherine

I think it would work if you gave the buckwheat groats a whiz in your blender as they are very soft. I think the dark buckwheat flour would have a strong flavor. I bought buckwheat flour from a bulk store, it didn't say light or dark - I'm sure it's light because the taste of the bread is very mild.
