I found Bryanna's Gyro recipe. It was actually in her bi-weekly recipes. You need to ask her for her Falafel recipe. I think it is in one of her cookbooks. Gyro and Falafel are 2 different dishes. They either put Gyro or Falafel in the sandwiches using pita breads. I love them both.
Gyros are actually meat balls or patties. But this one below is a vegan version. It is pretty good and easy with the Gimme Lean. I didn't like Gimme Lean until I made this recipe. The sauces are good too.
BRYANNA’S VEGAN GYRO (pronounced “yee-roe") SANDWICHES: BRYANNA’S VEGAN GYRO “MEATBALLS” Makes about 4 servings NOTE: Do not use "hamburger crumbles" for this-- they will not stick together to make balls. You have to use the "Gimme Lean"! For 1 package of Lightlife “Gimme Lean” (hamburger-type) add: 1/4 c. of dried breadcrumbs soaked with 1/4 c. soymilk 2 large clove garlic, peeled and pressed 2 T. lemon juice 1/2 tsp. dry basil 1/4 tsp. dry marjoram 1/2 tsp. dry thyme 1/2 tsp. dry rosemary 1/2 tsp. freshly-ground black pepper 2 T. minced fresh parsley Mix well and form the mixture into small patties or balls. Brown the patties or balls in a little olive oil until nicely browned. Serve the gyro “meatballs” in pitas, flatbreads, or crusty rolls with tomato cucumber, and red onion slices, with the following sauce. BRYANNA’S VEGAN GYRO SAUCE: 2 c. Tofu Sour Creme (Tofutti, or see recipe just below) 1 medium cucumber peeled, seeded, pureed, and strained 2 cloves garlic, crushed 1/2 tsp. salt. Optional: 2 T. sugar -- or to taste Mix together well. BRYANNA’S TOFU SOUR CREME Makes 1 and 1/2 c. Silken tofu makes a smooth, rich-tasting mixture which can be used anywhere you would normally use sour cream, including cooking. 1 (12.3 oz.) boxes extra-firm SILKEN tofu 3 T. lemon juice 1/2 tsp. sugar 1/4 tsp. salt OPTIONAL: for a richer mixture, add 1-2 T. olive oil Process in a food processor or blender until VERY smooth. Keep in a covered container in the refrigerator for up to a week. ---------- Debbie

Thanks for posting the recipes, Debbie. I recently ordered Bryanna's cookbooks, so I will check for the falafel recipe when the books arrive. Do you happen to know which book its in ? ---------- Val

Val,
I believe it is called Soy Falafel and it is in the Soyfoods for Positive Menopause cookbook. If you want it firmer you can reduce the tofu.
