Mexican Breakfast Casserole + Maryland Ham

I've had a day off today and thought I'd get in the kitchen to do some cooking. I wanted to make the Mexican Breakfast Casserole (as a Dinner dish, I admit), also because my previous attempts at cooking omelets at the stovetop hadn't been so successful, but I thought the recipe looked interesting, also I decided to buy a package of Tofutti Mozzarella-style cheese for the very first time - I've been too stingy before since I think what equals 5 USD is too expensive for 8 slices of cheese! But since Bjarne always complains he misses cheese on some dishes, I thought it was worth trying. I used a package of plain wieners since we can't get chorizo here (and I don't like the texture of our hamburger crumbles) so I compensated by adding a spoonful of chile flakes to the batter. Also I didn't add the cheese before halfway through baking as I remember you once said the Tofutti cheeses could sort of melt away into the air. The casserole came out perfect and was scrumptious! While the mozzarella added lots of authentic cheese flavour, I don't think it had that much taste though. What kind did you use, Bryanna?
I've also been cooking the new stuffed ham today. I made it as two small hams so I could easily freeze one of them. Maybe I didn't roll the dough out so thinly as it was supposed to 'cause I think there was A LOT of greens left after stuffing. I froze it, it could come in useful for a soup one day. Unfortunately, when I would remove the hams from the clay cooker, I lost the grip and both of them rolled out and fell onto the floor ... after nearly crying of hysteria, I was able to save them so we will be having one (reheated ... to kill any bacteria from our kitchen floor, ha ha) but you won't be getting any pictures of them! I'm sure they'll be great tasting though, judging from the flavour.

Oh, what a pity that you lost one of the rolled hams. It seems that you had a few kitchen accidents lately. I enjoy your posts though, funny the way you described it! I can't wait to try that stuffed ham.
