Hi, I stumbled across this and thought it might be of interest. Catherine
from THE SPLENDID GRAIN by Rebecca Wood:
VANILLA SUGAR makes 2 cups 1 vanilla bean 2 cups Sucanat or packed light brown sugar
Split the vanilla bean in half and place it in a pint-size jar. Add the Sucanat. Cover tightly. The flavored sugar will be ready to use in 5 days. As the sugar is used, replace it with new sugar until the bean loses its flavoring power.
INSTANT VANILLA SUGAR makes 1/4 cup 1/4 teaspoon pure vanilla extract 1/4 cup Sucanat or packed light brown sugar
Rub the vanilla into the Sucanat with your fingertips until it is uniformly mixed.
