I just made this casserole for supper last night because I has leftover cornchips that weren't very crunchy anymore. I didn't have any red peppers, so here's my take and it was delish.
Instead of commercial sausage - I rehydrated and flavored TVP granules with all the sausage seasonings and just used this without extra tofu and added this to the blended batter mixture.
I had no red pepper, so instead of other additions I spread salsa on the top of the casserole and sprinkled vegan parmeson cheese on top of that. It browned beautifully and tasted delish!! Served it with extra salsa, salad and apple crisp - the one from last March's newsletter.
Thanks for the recipe Bryanna! I was surprised how well Ener-g egg replacer whips up light and fluffy like it did.
