I agree! The "Ghameih Badmejan" with the eggplant especially calls to me. It's definitely going on my "gotta try it" list.
Guess I'm on an eggplant kick. I'd like to try your "Eggplant Parmesan" recipe tonight. Of course, I had to pay through the nose for fresh basil this time of year but, hey, it's Valentine's Day, and it's my sweetie's favorite!
One question, though, is there a non-wheat flour which you'd recommend for thickening the white sauce?

Are you looking at the eggplant parmesan recipe from "Nonna's ITalian Kitchen"? Because, if so, there is a wheat-free variation at the bottom of the beciamella recipe. ---------- "To look like a goddess, eat like a peasant." Karen Andres

I pulled the recipe off the web somewhere awhile back but have since purchased Nonna so I will look there instead. Thanks! Catherine
