I'm adapting a commercial recipe for veggie burgers. It calls for Gelcarin*-a carageenan thickener. I was thinking about substituting a mixture of guar gum or xanthan gum. Do you know the ratio of water to guar gum or xanthan gum? Do you think either of these products might work? Do I just mix stir them into water?

They might work and, yes, you just mix them with water. However, Kosher gelatin is a carageenan product-- maybe that would work? ---------- "To look like a goddess, eat like a peasant." Karen Andres

Thanks Bryanna. I will give it a try. I'm assuming that the carragenan product is used as an "egg" replacer, and am thinking that maybe flax eggs might work as well. Not sure, but I'll let you know what winds up working.
