DORI, have you tried my Dutch Pumpernickel Bread?

No, I haven't tried it yet. I will though. This might work to change into an allergy free recipe for my boy. I think I can replace the wheat bulgar with some other cracked grain. Any idea's on making a sourdough starter out of something other than wheat - like all rye? Possible barley? Ever heard of such a thing? Fortunately, no allergies to yeast (except brewers yeast) here, but sourdough sure is yummy!

Yes, you can make a sourdough starter out of rye! And other cracked grain would undoutedly work fine. Let me know how it works! Also, a friend of mine who can't eat wheat tried my pancake mix with a non-gluten flour mix and said it worked great!

My favorite bakers here make a delicious sourdough they call Swiss Rye with only rye, water, and salt which they bake in a wood-fired brick oven. It's awesome! Catherine

Swiss rye sounds yummy. I will try barley sourdough soon and let you know, I have had some success making barley and oat flour muffins and drop biscuits, but the family thinks oat flour is very nutty tasting, not always pleasant. I may try rye also.

Oh! I followed your pancake recipe (the one calling for fruit juice) using a 100% light buckwheat flour. The juice I had on hand happened to be white cranberry/peach and it works wonderful too! My son has been making these on his own. DELISH!
