Have you seen this? It sounds like your recipe! In the video of the process, they show and mention the "strands" of it, and how they put it through that machine, which reminded me of your process of pulling and kneading to obtain the same result. Were they reading your posts on seitan??!! Haha. You figured it out long before they.

I also notice that your seitan actually looks better than theirs. I'd be interested in the flavor they got.
A key seems to be the temperature. Interesting!
