too much NY?

Something I've been wondering lately - is it possible to eat too much nutritional yeast? we've been making a lot more seitan recently, and getting more (fortified) NY than we used to. Add to that the occasional dish of mac & cheese and, well, we're definitely not lacking the B-vitamins! But can too much be hard on the kidneys?

I don't think so, Frances. I generally use only 1/4 to 1/2 cup in my seitan, sometimes less. If you divide that amount up by the number of serving you get out of it (say 16 cutlets), it's not much, really! (1 1/2 tsp. per cutlet!)
