i've been reading, recently, about what nutritional powerhouses pumpkin seeds are ... sadly, some (most??) of their nutrition is lost when roasted. and unfortunately, i find raw pumpkin seeds rather yucky, by themselves. any ideas for tastier ways to consume raw pumpkin seeds? (the only thing that comes to mind is working them into parm subs, but that's not something i eat very often! :) thanks!

It is a fallacy that nutrition is lost when cooking seeds. Compare the nutritional value of roasted pumpkin seeds: http://www.healthrecipes.com/pumpkin_seeds.htm to that of raw seeds: http://www.nal.usda.gov/fnic/foodcomp/cgi-bin/list_nut_edit.pl (both from USDA National Nutrient Database for Standard Reference)There's a whole article with links and recipes, about pumpkin seeds in the Oct/Nov 04 issue of the Vegan Feast.
