I was looking at the "Pork" Roulade and wanted to take a shot at making it (it looks rather challenging...but that's half the fun.) The only question I have is about the vital wheat gluten. I looked in my local Whole Foods and they didn't have it. Is there something else one can use or do I need to find that exact ingredient? Are there good on-line sources?

I can't believe they don't have it! Even supermarkets have gluten powder in the baking section because alot of people add it to bread machine breads. Ask someone else in the health food store-- alot of casual clerks don't know alot about the products. It is also called pure gluten powder. Just don't get "gluten flour", which is often part white flour. Anyone know where to get it online?

Okay-- they have it at bulkfoods.com-- just type "vital wheat gluten" into the search box.

I'll have to take a look tomorrow when I'm out and about. I'm glad you mentioned NOT to use gluten flour...I had thought they were the same.

Hi,
I also shop at Whole Foods Market. In my area, Tustin, California, they have the Vital Gluten Flour in a package, Bob's Red Mill brand, an Oregon mill. It is stocked in the Baking section isle. I have always bought it from WFM. Maybe, they were just out that time.

I'll have to keep an eye out. They have a lot of Bob's Red Mill products at the WFM here but I didn't see the wheat gluten. The gentleman who was helping me thought that maybe their larger stores in the area might have it.

Where can I buy Vital Wheat Gluten in Toronto,Ontario Canada. I tried my local supermarket?
Could I use Wheat Germ I need it to make 100% whole wheat bread in a bread machine.

Bob's Red Mill vital wheat gluten is very expensive where I live - 10.00 [Canadian] for a fairly small package. The last bag I bought, I seldom ever used because I wanted it to last.
Bulk Barn often sells gluten powder and it is much, much cheaper! At my Bulk Barn, you can also buy a ton of other veggie products ... like tvp granules and chunks, soymilk and almond milk, a mind-boggling assortment of flours, grains and dried beans, nutritional yeast, etc. It's my new favourite store!

Lennie, I forgot to add that wheat germ would not take the place of Vital Wheat Gluten.

a little late (I just found this board - yay!) but amazon.com sells vwg for about $2.63/lb (if you sign up to subscribe and save (which you can cancel at anytime)) ... anyway, our WholeFoods sells it in bulk, and in the "Bob's Red Mill" section, but not as cheap as 2.63/lb. from amazon, you get enough to make about 8 (1.5 cup gluten) recipes.
oh, and most of amazon's grocery stuff is free shipping (at least in the us)
