what to do with a lot of bad turkey ...

let me start by saying - *not* one of Bryanna's recipes! which was my first mistake. but it was just a recipe that I'd been wanting to try for years ... it's really more of a tofu turkey with some wheat gluten, soy flour, tvp ... anyway, now I have two logs - I doubled the recipe so my bosch would be happy mixing it (mistake number 2). plus I'd read some rave reviews. who knows, maybe I did something wrong(mistakes 3 thru ...)

what I do know - I have these 2 big logs that I don't really like or know what to do with ... sort of like airy,grainy tofu, if that makes any sense. the flavor isn't awful. it's more of a texture problem. texture has not improved since it cooled as I hoped.

anyway, if anyone has any suggestions ... I don't want to throw all this food out but it needs some serious help.

Could you crumble it up and use it like ground turkey in casseroles, etc.?

That's what I ended up doing, sort of ... I used it just as tofu, in my ever-evolving meatloaf recipe and it turned out really well with a lot more flavor than plain tofu adds! So now, it's a good thing that my freezer's stuffed with 'turkey'! :)
