Help veganizing a family favorite

Hello, I was hoping someone might have some suggestions for veganizing one of my family's favorite summer dishes.
Zucchinni Pie.

Here's the ingredients....

1/4 C oil
4 eggs
3 C diced zucchinni
1 Onion diced
1/2 C bisquick (heart healthy version)
1 C grated cheese
Parsley
salt and pepper

Mix, bake in shallow baking pan at 350 degrees for 1/2 hour or until center is set.

Any suggestions would be greatly appreciated as I am still making this for the family and miss it.

Christine, this is the only recipe I can find for a vegan "impossible pie', but it is a sweet one. perhaps it will give you someplace to start, though!

Hi,

Thanks for the suggestion Bryanna. I actually had the info I needed in your Nonna's cookbook. This original recipe was more of a fritatta than a pie.
