I made this recipe yesterday. Yeah, from last year newsletter. I did the batch cooking with this recipe. I cook the sauce one day, then the filling, and finally made the masa dough yesterday and put it together. It baked for 2 hours so we brought the pie to work for lunch. It's doable and it's yummy. I don't mind batch cooking for yummy dishes. :-)
I love the masa dough with yam in it. It's goood. The method to make pie instead of individual tamale is brilliant.
Oh, I also made Bryanna's Vegan Sharp Cheddar. I double the dijon mustard for extra sharpness. I made another batch where I added chipotle powder to make it SPICY. It was the best vegan cheese I have ever had. I don't buy commercial vegan cheeses anymore. This 'cheese' is the best and it's great for 'cheese' toast.
Thanks Bryanna! I know I am slow in trying recipes in your newsletter. Maybe it's great that you stopped so I can catch up...he he....
