Hi Bryanna,
Sheesh........I feel like such a pain in the neck with this Irish moss! I ordered some from "from nature with love" source and it was just as dark and strong smelling. The frontier moss was dark but odorless until wet.
I will try the new source as it is totally worth the trial and error for your "cheese" recipes that my family really enjoyed.

I just noticed that L'Epecerie carries it.
Christine, I know what you mean because I ordered it a couple of years ago and had the same problem. It smelled like tuna fish, and I still gag at the thought of how fishy it was in the cheese. Now if anyone is interested in making a truly fishy "tuna" casserole, this might be the magic ingredient.

I'm sorry about that, you guys! Obviously, they are not truthful in gtheir advertising because the picture on my ingredients page is from the "nature with love" website! The one I get from the Canadian site is pale, powdery and virtually odorless. L'Epcierie should be reliable, since they sell to chefs who practice molecular gastronomy in high-priced restaurants! I will remove the nature-with-love link. BTW, I am having some issues with the website, and the old newsletter page with the original cheese recipes is a big nmess right now because I tried to update it and, well, it's a long story! If you need the recipes, write to me and I'll email them or post them here. They are in some of theother issues, too.

Oh, it's not your fault Bryanna! Just one of the hazards of ordering things online, without being able to smell or see things up close.
Like I said, if you need a thickener for a tuna casserole, that might be your secret ingredient.

Thanks for the info! I ordered some from frontier coop and it is darker and fishy. I thought it was just me! I will try it with the sharp cheddar version and see if that works out. I agree with Julie, maybe it will be a good ingredient for mock tuna casserole, or other such dishes. :)
