I love ethnic foods. My ethnic origins are Italy, Germany, Ireland and Norway.
One of my favorite Italian comfort foods is Lentils and macaroni (ditalini). I'm trying to lay off the refined flours so I tried this last night and it was so good, simple too.
Lentil soup over whole wheat berries (cooked in rice cooker) topped with Galaxy Parmasean. Really good, chewy and filling.

C hristine, just a note-- pasta is made from a high protein wheat called durham semolina. Even white pasta is low on the glycemic index. So, it is not in the same category as, say, white bread.

If you like lentils, you'll like mujadara. It's cooked lentil, caramelized onions, cooked brown basmati rice, and spices. It's very very good. It use a lot of olive oil though.
