The Tempeh Tacos recipe in the new newsletter are great! Reminds me of the fish tacos I used to eat. It can be replace with very firm tofu, I think, if you don't like tempeh. It can also be replaced with a firm soy fish but tempeh is great for it.
I like the crispyness when you bite into it. The raw cabbage is a must. This is how we eat fish tacos in Baja California. Also, it has to have some kind of roasted salsa. So it's all good.
