Hi all,

The recipes in the new released newsletter are so wonderful! I tried the pineapple upside down cake. Hhhhmmm....so good. I am making the roasted pineapple salsa today for Super Bow Sunday tomorrow. I am thinking to eat it with chips and vegan taquitos. I am glad that it is easy to find pineapple in my area. For Super Bowl Sunday I will also make Bryanna's pizzas.

I am also making the peruvian lomo saltado for today.


Oh, how can I forget. I made the Potato Kibeh with Lentil stuffing last night (yesterday was my day off). Yum, Yum! My husband liked it. The only thing was I think I bought a wrong bulgur wheat (Bob's Red Mill's quick cooking one) so I may have to cook it for a few minutes before I put it into the mashed potato. Some of the bulgur wheat were still crunchy. But this dish is great with my new Middle Eastern 'Sausages' with Caramelized Onions and Lentils. We also ate it with quinoa tabouleh. So kibeh, tabouleh, and middle eastern 'sausage' was a good combo.

I want to try to make the stew with the mystery ingredients (cocoa, right?) but don't know if I have the time. I want to make the Baja Tempeh Tacos, too, to eat it with the roasted pineapple salsa.

I also want to make the Pear Amaretti from last newsletter.

We have a company who might help us eat. :-)

Can you tell that I am in the mood for cooking right now? These newsletters are wonderful!

Wow Debbie, you are cooking up a storm! I plan on making a couple of the recipes this week, but I'm not sure where to start. Everything looks amazing in the newsletter. I found fresh pineapples pretty cheap at Costco (2.99 I think), so I do have one ready to go.

I loved the photo of your Middle Eastern sausages. They look fabulous. Now I'll have to make them along with the kibbeh.

The Peruvian lomo saltado is delicious. It reminds me of an Indonesian beef stew called Bistik (from English word "Beef Steak"). But ours has more sauce.

The roasted pineapple salsa is good. The pineapple upside down cake is very good, Mitchell had 2 helpings yesterday. This one can be changed to different fresh fruit, I think. How about plums, apples, and peaches?

I am soaking tempeh in its marinade and will have the Baja Style tacos tonight.

Unfortunately, the Saltillo tiles didn't work. I bought 2 tiles and both broke after heated up to 500 F. I will have to find the quarry tile now. But the pizzas were delicious.

Julie, the middle eastern sausage is not as easy as your italian sausage but it's good.
