What are your favorite recipes from Bryanna?

I was just thinking about how much of an impact Bryanna has had on my cooking and some of her recipes that are a fixed part of my life! Usually, our most special recipes are handed down from our mother or grandmother, etc. But my most special recipes have come from Bryanna!

This Christmas was very special because I made a Tofurky (still haven't gotten around to making my own roasts yet!) but, instead of buying the Tofurky stuffing and gravy, I made Bryanna's Bread Stuffing and Rich Brown Yeast Gravy. I am glad I did because I feel so proud that I made my own stuffing and gravy and they came out excellent! They will now definitely be a part of my holiday tradition. The next step is for me to get around making my own roasts!

Another recipe that has been part of my holiday tradition for 3 years now is Bryanna's Apulian Focaccia. It is better than any professional Focaccia I have ever had and when I make it I feel like I am the most excellent chef ever! This year, I topped it with chopped sundried tomatoes, chopped roasted red peppers, carmelized onion, and kalamata olives. It was excellent! Within the next week or so I am going to try to put some pictures online, so you can see how great it came out.

The one recipe of Bryanna's I use the most is Breast of Tofu. I only use the marinade and I bake the tofu on an oiled baking pan, but that's how I make "my" tofu!

Hi Silvia!
Your Apulian Focaccia sounds absolutely awesome. Is this a Bryanna recipe? I have missed it somewhere if it is. I recall a pumpkin seed foccocia and a grape one, but not one with all the savory toppings you mentioned.

You do realize that you ask a tough question... Bryanna has so many wonderful recipes that to list the favorites would be easier to sum up by saying, my favorite is the one I cook today.

Last week I marinated a batch of brest of tofu, pan fried them when needed and made sandwiches for lunch or cooked them and chopped themup for a salad protein. I always get compliments at lunchtime from co-workers about how healthy and colorful my lunches are.

I have been really been working up a desire for a shepherd's pie (almost no fat cookbook), but I haven't had potatoes in the house until yesterday. I am sure this will be something we have soon.

I love the saucy neetballs too, I just prepared some last week and froze them to be ready for when I am. I am going to make the cumin kofka's and serve them over rice.

Pumpkin Pie: I usally mzke this at Thanksgiving, but I made NO pies this year. I did make Bryanna's Pumpkin Soy-nog the day after she sent me the recipe. FABULOUS! We always enjoyed the original version too, but this is a wonderful change taste.

High-Fiber Vegetarian “Meatloaf”: Yes, this is a favorite deep in the coldness of my great plains USA winter.

Sun-dried tomato Stuffing is my usual and I make it when I do a holiday roulade. I have had MANY family compliments about this dressing. I tried a fruitier version a couple of years ago, but this is the one that brings the biggest ravings.

Rich Brown (Fat Free) Yeast Gravy ...... MUSHROOMS makes this the bomb in my family.

We love Italian biscotti and the breakfat ones she created a few newsletters ago, vegan fudge, sweet yeasted dough, orange coconut muffins and big bakery style ones, bran muffins, rosemary potatoes, pasta sauces, Brian's bread with sesame seeds ....

Today I am making a version of her tomato soup and I'll probably serve this with some Bryanna Sharp Chedda' grilled sandwiches and finish the meal with some leftover christmas baked good OR the wonderful dark chocolate that I purchased during after christmas day holiay shopping yesterday.

Oh .... another favorite on my mind, last year I made a soup called finnan haddie for boxing day. Today is boxing day and I remember really enjoying this soup several times through last winter.

I'm sure I could go on and on, but I need to get on with my day.

Hi Dori,

I think the dough for the grape foccacia is the same recipe that I use but I am not sure. It is made with potatoes and I leave out the flaxseed because I am allergic to flax. You can put any kind of toppings on. In the toppings I listed, I forgot the mushrooms that I added too! This past summer I made it with slices of home grown tomatoes on it! That was excellent too. It is such a simple recipe. I make it in a KitchenAid mixer. I find that's the easiest way. Oh, and the dough is sticky! I remember the first time I made it I thought I was doing something wrong but then Bryanna told me that it was perfect, that it's suppose to be sticky. It is very easy to stretch out too. The last couple of times I made it, I made the dough the night before and after the first rise, put it in the refrigerator until I was ready to use it the next day. The next day I stretched it out onto a large cookie sheet, let it rise for another 45 minutes or longer (whenever I am ready to finish it off), then put my toppings and bake it.

Mmmmm, let's see! Apple and Blackberry Crumble - Breast of Tofu - Low Fat Maple Granola - the turkey cutlets I made recently - Featherlight Dumplings - Hot Fudge Pudding Cake - and having read the above topic, my next favorite will probably be the salami. I'm away from home but brought with me "The (Almost) No Fat Cookbook" and I'm looking for a 'new' favorite to make for a party next Sunday. Garlic Slaw looks good!!

Hello,
I only just got access to the site and the newsletters, but I am keen to try out the pate and the saitan (can't find the recipe though - any help is appreciated) and loads of the other things...

I am still only a veggie but am slowly erradicating non vegan things out of our diet. Hence the subscribing to the newsletter, thought this would help and then I can slowly stock up on vegan ingredients.

Hi, there! Welcome to the board! As to indexing recipes, I suggest downloading all the issues to your computer in a separate folder. Then download the free Copernic Desktop Search that is explained on the password page. It will index your files (whichever ones you want). Then you can search for "seitan" (for instance) and you can narrow down your search to ONLY that special folder, if you wish. This makes it easy to find recipes!
