Hi everyone,
Bryanna, as always thanks for a wonderful newsletter. I'm sure most of us get excited like a child on Christmas morning when we receive the tidings of a new newsletter ...
We instantly tried the roasted parsnip soup yesterday. We had a bag of parsnips lying in the fridge from our weekly veg delivery but I hadn't really anything in mind what to do with them. Roasting the parsnips before making them into soup really added extra flavour.
Funny that Debbie mentioned the sizzling Saigon crêpes cause we tried them too a while ago (I just never got around to post it). I made them from soaked mung beans and brown rice rather than from the split mung beans and rice flour but the result was equally great and a hit with the guest we had over for dinner that night.
I have to try that seitan salami as well! What an original idea with the breakfast pizza - it looks spectacular! I think we're gonna cheat and eat it for supper one day, do you think I can do that ;-D I have a day off tomorrow and will be doing a seitan ham so there will be some for the pizza.
The polenta dish with beans and kale looks very elegant. That one's a must as well.
As tempting as all Bryanna's cakes and deserts look, I will have to resist the temptation. How on earth do you manage to keep your weight, Bryanna, if you have to try out all those recipes :-D
Today dinner had to be prepared quickly so I heated two ciabatta buns in the oven while pan-frying some sliced mushrooms with some sliced veg chicken from the freezer. I made a tofu mayonnaise in a snap (tofu, vinegar, salt and olive oil), blending in a dash of curry, and threw everything in the buns with a few lettuce leaves and some grilled marinated pepper from the jar. What a treat! Incredibly yummy! A glass of freshly made carrot juice on the side and we were all set!
Finally - for a completely non-food-related topic: We're in the process of building a house in the beautiful country side of our neighbour country Sweden - and finally all the boring paper work has been done and the actual building project has begun! Our old summer house has been torn down, and this coming Wednesday all the house components will be delivered on the ground in one day. Then they will spend four months finishing everything so we'll be ready to move in mid-February when everything will hopefully be covered with snow ...

(Me pondering: So that's our bedroom ...)

Always so good to hear from you, Søren! The house is so exciting! How long to you think it will be before it's finished?
As to my weight-- it is always a stuggle! We are going to whitehorse, Yukon tomorow and will be away for about 12 dsays, during which time I hope I can not over-eat! However, our host owns a bakery-restaurant, so i think we will be very well-fed. Then its Weight watcher's Core plan until Chritmas!
