Gluten free Flour mix

I wanted to tell you HOW perfectly your Gluten Free Flour mix from the Apr/May/June 2007 newsletter works!!

I made up a batch, and then used it as you directed cup for cup in a regular recipe for a spiced pumpkin/nut loaf (one of Fran Costigan's recipes in her Great Good Desserts).

Kept everything in the recipe the same, but instead of one cup of white flour and one cup of whole wheat pastry flour, used 2 cups of your gluten-free mix.

You would NOT believe the texture!!! JUST like a regular loaf made with wheat flour!! Soft, moist, holds together well, and very soft and tender on the tongue (I've found alot of gluten-free stuff is often gritty to the tongue, especially if made from rice flour). My hubbie is ecstatic, and has eaten half the loaf already.

I took a couple slices to a gluten allergic colleague at work, and he too was amazed at the normal texture. He never bakes his own stuff, so is at the mercy of these store-bought gluten-free things, which are generally dry, crumbly, etc. He was so excited and really, really liked it!!

The only thing I've found, is when you measure out the flour, realize you MUST DO just what you're taught never to do with wheat flour: Tap the measuring cup, jostle it, to let all the flour settle. After I did all that, I even packed the top down with a rubber spatula. Between the potato starch, tapioca flour, and xantham gum that are all so powdery, I think you need to do that to get the full amount that you need.

Yes, in the last year he has gone from wheat free to gluten free. At first we thought it was just wheat he needed to avoid, but he kept having ongoing allergy symptoms he could not get rid of, so he decided to eliminate all gluten.

Thankfully it is not celiac symptoms that he has (no gastrointestinal stuff) ... more just vague systemic symptoms that seemed to respond to eliminating gluten.
