I bought a couple of bags of Vegetarian konjac shrimp while I was in Toronto last week and now I'm not entirely sure what to do with them. The person who sold them to me told me they were unseasoned (these were shelf-stable, apparently the frozen ones -- which were impractical for bringing home -- which I'd had at restaurants before come seasoned) so I should marinate them before using them.
I was thinking of making a light brine to give them the combination of salt and sweetness that shrimp have, and seasoning the brine with some kelp flakes and dulse powder.
Does anyone have any other suggestions? Has anyone else tried these? Do any of you know how long the opened package will keep? Apparently the sealed package will keep for around a year.

Sorry, I have never heard of these! I wonder if they are chewy like the Japanese product that you put into stews?

I have not used this also. But for the other 'shrimp' I chopped it up and throw them into Bryanna's Cioppino Soup and add some dulse flakes. If these are unseasoned, they may pick up the seasoning of the broth.

Can't you just use real shrimp? I've been told it's vegetarian so I don't see why not?
*** JUST KIDDING ***
I tried buying some veg konjac seafood by my Chinese dealer but I must admit I didn't care much for it. I remember trying it fried with garlic, parley and lemon which I thought would make a tasty treat but in the end the shrimp remained bland and chalky tasting. I was never into seafood in my pre-veg days so it wasn't any great loss though, and it was rather cheap as well.
