A friend asked me to veganize this recipe, any idea to replace the eggs?

Sweet Carrot Pumpkin Bars

Highly nutritious! This recipe came from PREVENTION magazine, Dec 2003. "A double whammy of pumpkin and carrots gives just one of these bars more than 100% of the daily value of vitamin A."
12 servings 45 minutes cook time
10 minutes prep time

Ingredients:
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 large egg
1 large egg white
1 cup brown sugar, packed
1/2 cup canned pumpkin
2 tablespoons canola oil
2 tablespoons margarine, melted
1 grated orange, rind of
1 teaspoon vanilla extract
1/2 cup grated carrots
1/2 cup raisins
1/2 cup dried cranberries
1/2 cup chopped walnuts
Directions:

1. Preheat oven to 350 degrees F.
2. Combine flour, baking powder, baking soda, cinnamon, and salt.
3. In a separate bowl, beat egg and egg white until foamy. Beat in sugar, pumpkin, oil, margarine, orange peel, and vanilla extract until smooth.
4. Add flour mixture to egg mixture, and stir by hand until almost combined. Stir in carrots, raisins, cranberries, and nuts just until blended.
5. Spread batter into 8" X 8" pan coated with cooking spray. Bake 30 to 35 minutes, until top springs back when lightly touched. Cool in pan on rack.
6. Makes 1 dozen.

I would probably just omit the eggs and substitute Earth Balance for the margarine but you could always use 1 tsp ground flax and 2 tbsp of water. There should be enough with the pumpkin to bind everything together.

I would beat together 1 1/2 Tbs. GROUND flaxseed with 1/3 cup water and 1 Tbs. egg replacer powder with a hand immersion blender until fluffy and use that in palce of the egg and egg white.

Thanks, I will try the 1 1/2 tbsp ground flax seeds plus 1/3 cup water plus 1 Tbsp egg replacer tonight.

Bryanna,

It works great! It is a delicious bar. I am thinking about frosting it with vegan cream cheeze frosting.

My question: The recipe only makes 8 by 8 baking pan, so not very much at all. If I want to double the recipe should I double the egg replacer and flax seeds and water too?
