Vegan "porchetta"

Mmm ... we've had the new vegan herb-stuffed, white-wine-flavoured "porchetta" two days in a row! Unsurprisingly, it was a delicious treat ... I made a herb stuffing with basil, rosemary, garlic and then instead of fennel, I used some nutmeg.
Yesterday we had it with oven-roasted new potatoes, steamed green asparagus and a gravy which I'd made a few days before when we had pan-fried breast of tofu. I blended the marinade with some silken tofu until smooth and creamy and heated it, whipping in some margarine and some roasted sesame oil, and then beat in some flour mixed with water. It went phenomenally with the porchetta as well!
Today we had the left-overs cold on a platter with sliced lettuce, red pepper and cucumber with olives and an Italian dressing and enjoyed the meal outside, me with a glass of chilled white wine. Absolutely yummy!
Thanks for another superb recipe, Bryanna, I hope your seitan e-book will soon be finished.

Søren, you are always the first to try the new roasts! I'm so glad you liked it! Did you use the yuba, BTW?

Unfortunately I didn't have any yuba around this time but it tasted fine even without it. I have wrapped seitan loaves in yuba before and enjoyed the crunch of it!

Bryanna....THANK YOU SO MUCH for posting that recipe! I can't wait to try it. It'll have to be after I slow down on weekends though...its wedding season (I'm a photographer) In the meantime, my mouth will just water with anticipation after reading Søren's post!
