Question on your "Pourable Dairy Free Cream"

Hi Bryanna ... these questions are from my Mom (who's comfort level with computer use is limited to email and google {grin!!}). At this year's Vegetarian Awakening, she bought the book by you and Jo Stepaniak called "Dairy Free and Delicious" and she wants to make the "Pourable Dairy Free Cream" from that book.

2 questions from her:

First, you call for coconut extract. All she can find is either imitation coconut extract or coconut flavoring. Do you have a recommendation as to which to use. Have you been able to find real coconut extract?

Secondly: You call for commercial soy milk or rice milk. She makes her own soy milk and would just like to use that. Any reason it needs to be a commercial kind?

Hi, Brenda! The commercial soymilk is gernerally thicker and richer. She could try it with homemade soymilk made with the water to the lower mark. As for the coconut extrac t, I now use coconut powder instead-- you would only need a little. There is lots about that it tghe new newsletter!

Thank you so much Bryanna!! I'll telephone her with this info.

I have been off from work since the newsletter came out, and unfortunately, I have to wait to get the newsletter there at work (high speed). For some reason, my dial up won't download the pdf file. It gets so far and then just stops. I have been DYING to see what's all in this latest newsletter. How neat you have info on this very thing (coconut powder)!!

I go into work today for 3 days, so in just a few hours I'll be enjoying your handiwork!!

Brenda, I will email you the pdf file-- sometimes you can download it more easily that way!

If you haven't already done so, you do not need to, since that's what I did ... I downloaded the pdf file at work, then emailed it to myself and have opened it up just fine here at home!! Looks wonderful!! ALready plan to have that luscious spinach salad soon!
