Does anyone have a good white bean roasted red pepper dip recipe to recommend? I'm looking for something simple that can be made quickly.

There is a basic white bean dip in my book "20 minutes to Dinner" , to which pureed rosted red pepper s could be added-- I could post the recipe for you if you don't have it.
I found this online-- it is repeated in many places online:
White Bean and Roasted Red Pepper Dip Adapted from Cooking Light. Makes about 2 cups.
1/4 cup chopped basil 1 teaspoon balsamic vinegar 1 (16 ounce) can cannellini beans, rinsed and drained 1 (7 ounce) bottle roasted red bell peppers, rinsed and drained 1 large garlic clove 2 tablespoons extra-virgin olive oil 2 teaspoons salt 1 teaspoon ground black pepper Juice of half a lemon
Place basil, vinegar, beans, red peppers and garlic in food processor. Process until smooth. With processor running, slowly add oil through chute.
Stir in salt, black pepper and lemon juice.

Thanks, Bryanna! I do have 20 Minutes to Dinner--I'll check when I get home. Sorry I didn't think to look there myself earlier . . .

You can probably replace the bread crumbs in Bryanna's Muhammara in Fiber for Life cookbook with white beans.
I made this Muhammara recently and was so goood!
Muhammara is toasted walnuts and roasted bell pepper dip.
