Okay so I finally get the time to make the kebab recipe and I find out I have no soy flour or besan. Grrr...does anyone know what I can substitue for these. I have brown rice flour, kamut flour, oat flour and quinoa flour. Please help. I really want to try this recipe tonight.

My guess would be oat flour.

You really need a high-protein flour like soy or chickpea-- otherwise it might be gummy. You could try grinding TVP in a coffee mill to a fine powder.

I ended up using quinoa flour and it turned out perfect. Even my husband loved this recipe.

Great! Good to know something else works-- quinoa was a good choice, since it's high in protein too.
