Tried your nacho cheese, Julie!

Hi Julie,

We had soft tacos and nacho cheese in the past few nights. Your nacho cheese from the newsletter is YUMMY! I didn't add the 1/4 cup of water at the end since I like the consistency already. I added 1 Tbsp. non-melted Earth Balance and it became too runny. So next time I will add just a little Earth Balance.

But the taste is so gooood! Even Mitchell, at first, said, 'it is ok' but then he keeps getting it over and over again for his tacos and nachos. So in other words, he LIKES it! :-)

I made Bryanna Soyrizo or Chorizo to go with the soft tacos, fresh salsa, drained canned black beans, and sliced avocado. Yum! They are all low fat and this is so easy to make. Trader Joe's sell mini tortillas in a package. Those were what I used. I grilled them in my Cuisinart griller for just a few seconds until they are soft.

I'm so glad that you liked it Debbie. Maybe we should slightly reduce the liquid in the original recipe to accomodate the Earth Balance at the end. That little bit of Earth Balance seems to just make it a little richer. I bought some Penzey's taco seasoning which was great in the sauce. Sometimes it's hard to find one without whey in it. I also find that this sauce really hits the spot when I'm craving something "cheezy".

This sauce is really good over baked potatoes too (and tossed with pasta like mac and cheeze). It's so funny because we will often get "hooked" on one of Bryanna's recipes and make it over and over again.

I'll have to give Bryasnna's chorizo a try. Which book or newsletter is the recipe in?
