I currently make banana muffis with a 50-50 mix of white and wheat flour. Is there another flour I can use for the white flour that will do the same thing? Right now they rise nice and big...the wheat alone didn't do it.

I usually use a mixture of unbleached white and wholewheat pastry flour. If the muffin is the dark type and the color of the flour doesn't matter, I use all wholewheat pastry flour. Or, you can use a little oat flour or brown rice flour along with the pastry flour, but not too much.

I tried all whole wheat pastry flour in the muffins and they came out perfect. Thanks again.
