Alternative to using hard boiled eggs ?

Can someone recommend a good substitute for hard boiled eggs ? I'm trying to make a Malaysian-Indian dish, and one of the ingredients is hard boiled eggs that are wedged and added at the end. The dish also calls for some potatoes, so the substitute would have to be something else ......

Would appreciate any suggestions!

Some kind of marinated firm tofu maybe?

Thanks Bryanna! Great idea. The dish contains tofu but I'll try different varieties.

Debbie, I'm sorry it took me so long to answer your question. I'm making a Malaysian - Indian rojak dish. Still experimenting with it, but will share it with all of you when it's ready!

Hi Val,

I don't know if you can find this in your area or not (I bought mine in Wisconsin), but this super-firm, vacuum packed (no water!) tofu by Wildwood Organics is incredibly like hard-boiled egg white.

You're on your own for the yolk, though . . .

Thanks Catherine!! I just wrote to ask them if I could buy their products in Southern California. I'll also check the next time I'm in Whole Foods.

I think it may just work!! I'm not too concerned about the yolk part, it's the hard boiled egg white texture that's required. Thanks again!

Val, Trader Joe's now carries this tofu, and I think that it's made by Wildwood. It really is super-firm. I think that the price is much cheaper at Trader Joe's as well.
