Nacho Cheeze Sauce

I tried this recipe out last week and had a little problem. The sauce thickened beautifully and smelled wonderful but as soon as I added the miso and earth balance it went super runy and would not thicken again. It was still super amazing. I had enough to put some over nachos and the rest I mixed into a rice and yves sausage dish I made and it tasted amazing. Exactly like a cheezy rice dish!

Where do you think I went wrong?

I haven't had that problem, but I've always added the miso at the begining (forgetting that you don't want to heat miso). I made the sauce again the other night and actually forgot to add the miso, but the sauce was still great.

I wish I could help with this, but I've never had that problem. Maybe try blending it with a hand (stick) blender if this happens again.

Maybe I just put too much earth balance (I did not melt it before putting it in so that might have factored into it as well)

Oh well...practise makes perfect and since this sauce tastes perfect practise will be fun! Thanks guys

Another thought on this sauce. Did you make sure to blend the sauce really well before cooking?

I also don't melt the Earth Balance before adding to the sauce. Maybe try adding just a tiny bit, or none at all.
