Soy and Seitan "chicken" culets

One of the first Seitan recipes I tried was the soy and seitan chicken cutlets but now I can't seem to find the recipe. I have been looking all over. I found the quick version and the new version; I think I tried the quick version and liked the other better. does anyone know where the original one is?

There isn't really an "original" one-- there are two different recipes. The "Quick Cutlets" recipe is in the Ap/may 05 issue of VF, and also the Jun/Jul 05 issue. It may be in others, also, but it's all the same recipe. It contains tofu, and the cutlets are thin. I don't call it "new" anymore!

The other recipe contains tapioca and is called "Tender Seitan Chicken", and the cutlets are thicker. I have used the "pork" version of this in a newsletter, but I don't think I've used the chicken version in the Vegan Feast.
