Focaccia dough question

Hi Bryanna!
This weather IS crazy! Sorry to hear about your weather problems. It is unseasonably warm here in New Jersey - for example, right now it's 57 degrees and tomorrow it's supposed to be 60 degrees! I would like a little snow though, especially for Christmas or at least some cooler weather!
Anyway, I was wondering if I can make the Focaccia Pugliese/Apulian Focaccia dough the day before and keep it in the refrigerator until I am ready to bake it? If not I guess I could just make it anyway because it does stay fresh for a couple of days at least after it's baked.

I'm sure that would be fine, Silvia. Just keep the dough well covered so that it doesn't dry out.
