I finally got around to making the soy curl divan today. I used tofutti sour cream, the bechamel sauce was made with the mochiko/cashew variations, and a whole block of Vegan Gourmet cheddar. When I was eating I swear I almost cried. This is the best vegan dish I have ever had, beating the many dishes I had at Buddha Bodai in NYC (I'm a sucker for "home-style" meals) Not only was it easy, but the three meat/dairy lovers I fed it to raved about it. They didn't care it was vegan and actually helped to finish the whole casserole for lunch. Bryanna, I truley believe that God (or whatever higher power you believe in) sent you to this world on a mission to spread innovative, delicious, cost-effective, and earth-friendly meals for everyone to enjoy. Words cannot express how I feel, and this dish was like finding a buried treasure. Thank you thank you thank you.

Forgot to mention 2 things. I couldn't find any name brand vegan bread crumbs (Old London, Progresso, Stove Top, even Kroger store brand, all of which contained either Skim milk, whey, buttermilk, butter, or eggs) and I didn't think Panko would be a good substitute, so I went to the Kosher aisle and found Manischewitz Matzo Meal, which the label said was a "perfect substitute for bread crumbs" and only contains enriched unbleached wheat flour and water. I used 2 cups of this with about 1 - 2 tbsp of generic italian seasoning for a kick. I also added about 2 cups of diced turkey seitan.

Panko is ok as long as it doesn't have the honey. I am able to get the regular panko.

I found that 4C has one brand of seasoned bread crumbs without dairy stuff in it. It took a lot of looking but I found it in my local grocery store.

I think it was a Vegan Feast Kitchen Blog recipe only. Hmmm ... the reaction to those soy curls really make a European like me envious. Now I believe they must beat ordinary textured soy protein by miles ...
