Bday Cake?

Hi again,
this has probably been answered before so I apologize in advance.
I am looking for a nice simple bday cake my DH can make for me. Any good suggestions?

Bryanna's vegan genoise cake is very simple to make. You don't have to mix the batter too long, 1 minutes is enough. Use a simple hand mixer.
Bryanna's GENOISE CAKE
1 3/4 white cake flour (could use half wholewheat pastry flour) 1 cup granulated light unbleached sugar, or white beet sugar 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1/4 cup good-tasting dairy-free margarine (Earth Balance) or light oil 2/3 cup water 1/2 cup non-dairy milk 2 tsp vinegar 2 tsp vanilla OR 1 tsp. pure almond or lemon extract (or use 1 tsp. Vanilla and 1/2 tsp. Almond extract) Preheat oven to 350 degrees F. Mix the dry ingredients together with a whisk in a large mixing bowl. Add the margarine or oil and the water and beat with an electric mixer for a minute. Add the remaining ingredients and beatjust until smooth. Divide equally between two 8" greased and floured round cake pans. Bake 25 minutes, or until cakes test done. Cool on racks for 5 minutes, then loosen cakes and remove from pans to finish cooling. Yield: 2 8-inch or 9-inch cakes
I also have this chocolate cake recipe I got from the Internet a while ago. I hope these recipes are easy enough for DH.
ABSURDLY EASY CHOCOLATE CAKE
Dry ingredients: 3 cups all purpose flour (680 grams) 2 cups white vegan sugar (450 grams) 6 Tbs cocoa (100 grams) - imported Droste cocoa from Holland is the best 2 tsp baking soda (10 cc = 10 ml) 1 tsp salt (5 cc = 5 ml) Liquid ingredients: 3/4 cup vegetable oil (200 cc) 2 Tbs vinegar (30 cc) 2 tsp vanilla extract (10 cc) 2 cup cold water (480 cc) Directions: Preheat oven to 350 degrees Prepare 2 round 9-inch or 8-inch baking pan or a small sheet cake pan. Oil and flour the pans. If there is wax paper available, use wax paper for the bottom of the pans. Oil and flour the wax paper also. Shift the dry ingredients together into your mixer bowl. Mix the liquid ingredients together in another bowl. Use your mixer, add the liquid ingredients and use medium speed (no. 4) to mix the batter until it is well mix. But do not mix too long (approx. 3minutes). Scrape the bowl and stir the batter with spatula to make sure the batter is mixed well. Pour the batter into the prepared pans. If use 2 round pans, divide batter equally. Bake for 30 minutes. Do not oven open door until at least 5 minutes before time Take out cakes from the oven. Let cool in the pans for at least 10 minutes (a must). Invert cakes out of the pans into a wire cooling racks. Handle cakes with care. The cake is easily break when it is still warm. Let the cakes cool completely. Then, frost
