Hi Bryanna,
I made the Kuwaiti Black-eye peas and green from the new newsletter last night and it was very good. Mitchell said that he had the best meal last night. I pressure cooked the black-eye peas and used chopped greens from Trader Joe's (a combo of chopped chard, kale, and collard in a plastic bag). I served this with basmati rice mix with spices (also from Trader Joe's). It was very easy to make and I like the spices in it. It was easy and quick that I was able to cook everything in 45 minutes.

Here's a pressure cooker question for you, or anyone--I'm thinking about getting one and vaguely remember your post from awhile back about having to choose between 2 different valves for your Kuhn Rikon. What did you eventually choose, and are you happy with your choice? Thanks! Catherine

Hi Catherine,
I chose the Kuhn Rikon with the 'top turn' valve. YEAH! It is the BEST and I recommend it to everyone. I don't have to bring the pot to the sink (you know when the pot is full of soup, it could be very heavy) and pour cold water on it to lower the pressure. I can leave the pot on the burner and just have to turn the valve on top of the lid and steam will come out.
There are 2 different levels to let the steam out, Lo and Hi. If you are afraid to turn it to Hi, you can start with Lo first and let the steam out slowly. But if you are brave enough you can turn it to Hi. Lots of steam will come out and your kitchen is becoming like a steam bath....he he he....and if you need a facial you can put your face in front of the pot...he he...just kidding... That's if you want to have 'Mushroom Barley' or 'Thai Curry' flavoring on your face...he he...
I once pressure cooked beans and turn the valve to Hi and broth are coming out of the valve onto my cook top. I learned then to add a bit of oil in the cooking water when pressure cooking beans. That accident never happens anymore.
I ABSOLUTELY love my pressure cooker and thinking about buying another one with the top turn valve.
I pressure cooked the black-eye peas for 10 minutes and release pressure right away. I love black-eye peas too and this dish is so delicious with the peas.
