Question about "cheeses"

Hi, just wanted to say that your three cheese recipes are pretty cool, and I have tried two of them. Although I have a couple of questions.

I purchased the powdered carageenan from the herbal advantage site you listed and used that I figured that it'd be a safer bet to use a site you recommend for purchasing something like this.

The first "cheese" I made was the cheddar version, I made it mild and used 1/4 cup tahini and 1/4 cup whole raw cashews, omitted 1/2 Tbsp of the mild miso, and left out the mustard altogether. Well, it didn't harden after 24 hours of chilling, which didn't bother me too much because I think I know why (I used the microwave method of cooking it and still had little lumps of carageenan and agar, which I assumed when blended together would eventually be evenly distributed throughout the mix and harden the block up all the same, just a bit wrong on my behalf) but I did however find the taste of the carageenan in the cheese particularly strong, more so than I imagined. Is this common, to have such a strong seaweed taste, and is it is something that must be aquired?

The second "cheese" was the mild white version, which I cooked on the stove top, to almost boiling, while constantly whisking to ensure complete absorbtion of the carageenan/agar. The cheese firmed up well, in fact it started to firm up shortly after pouring it! But the seaweed taste was still there, not quite as strong because of the more complete absorbtion into the rest of the liquid, but still noticable.

I just wondered if you had any thoughts on this...btw I soaked each batch of carageenan/agar for the 5 minutes and my measurements were exact (packed and leveled). Again, love the recipes, just throwing my thoughts/questions out there.

I ordered from http://www.healthyvillage.com/product_list/15.html this page, and I got the name Herbal Advantage because thats what the used in their voice message they sent me when trying to reconcile a double charge on their behalf.

I think you may have to try what I did, and order again. I don't mind the "fishy" one I got the first time in the very strong cheddar (the carrageenan was grainy and brown), so I'll probably eventually use it up, but the powdery white kind I got the second time is great even in the mild ones. Try Frontier Coop, maybe -- they are a reliable company.
